If you need a chicken thighs recipe that actually saves you time, this one pan chicken and vegetables is the answer. This Rustic Chicken is my go-to easy weeknight dinner because it uses just a few ingredients to create real, incredible flavor with little cleanup!

This is the meal that saves my life every single week. It all started when my wife came home with chicken thighs and fresh rosemary and asked for a simple dinner. I decided to sear everything in one pan with some carrots, onions, and a splash of white wine and this Rustic Chicken was born.

If you try this, it’s going to save you so much time. It’s a true one-pot meal; minimal prep, zero stress, and you get that perfect crispy chicken skin and tender meat every single time. Whether you finish it as baked chicken thighs or simmer it on the stove, it’s a foolproof meal that tastes like you spent all day in the kitchen.

Ingredients
5 Chicken Thighs (Bone-in, skin-on)
Fresh Rosemary
3 Carrots, sliced
3 Onions, cut into large quarter chunks
1/2 Cup Dry White Wine
Extra Virgin Olive Oil
Salt & Black Pepper

Instructions
1. Rub the chicken thighs generously with olive oil, salt, pepper, and chopped fresh rosemary.
2. In a large skillet or pan, sear the chicken skin-side down over medium-high heat until the skin is golden and crispy.
3. Flip the chicken over. Add your carrots and onions to the pan. Season the vegetables with another pinch of salt, pepper, and more fresh rosemary.
4. Pour in the white wine and let it bubble for a moment.
5. Cover with a lid and simmer on low for 45 minutes OR Bake at 400°F (190°C) for about 45 minutes, keeping it lightly covered for the first half of the time.
